Earlier this morning I made another batch of dog food. This has been a weekly activity since the dogs October '21 teeth cleaning vet visit. Misha lost over 20 teeth and Cricket lost 15, so kibble was no longer a good meal option for them. I've heard horror stories of what is actually in commercial dog food so decided to make my own. My recipe has evolved in the months following that appointment. Now it includes brown rice, carrots, chicken organ meats, ground turkey, spinach, flax meal, turmeric, and oats. Because Misha needs a consistency that is crumbly rather than mushy (otherwise it sticks to the roof and falls out the sides of his mouth since he has no teeth to keep it in), I added the ground oats.
After the dog-food prep, I decided to do some me-food prep. I found a plant-based version of meat loaf in my Prevent and Reverse Heart Disease Cookbook and have made versions of it for the last couple of years. This is today's version:
Disclaimer :) -- You can change any ingredients and amounts to your own taste. I assigned amounts here only guestimating them as I don't normally measure anything. Also, this makes two-pans (9x9 and 9x12-ish per photo) of goodness. Cut amounts in half for a one-pan version. Saute: - 1 chopped onion - 1 c. chopped celery - 2 c. diced carrots - 3 cloves garlic, minced - 8 oz. chopped mushrooms Put into a large bowl and add: - 1 bunch cilantro chopped (stems and all) - 2-3 c. spinach (or other greens) chopped - 2 c. cooked lentils - 1 16 oz can black beans (or beans of choice) - 1 16 oz can corn - 1-2 c. cooked sweet potato with skin on - 1/2 c. chopped walnuts (essential for texture) - 1/3 c. nutritional yeast - 1/4 c. flax meal - 1/2 c. salsa - 2-3 T lemon juice - 2 c. oats - 1-2 tsp ground pepper - 1-2 tsp seasoned salt Mix together and add seasoning to taste. - Ketchup or BBQ sauce Prepare pan by putting a layer (thin or thick, your choice) of Ketchup or BBQ sauce on the bottom. Spoon mixture into pan. Top with another amount of ketchup or BBQ sauce. Bake at 350 deg for 1 hour.
